Recipe: Crock Pot Apple Pie Steel Cut Oats

What better smell to wake up to on a Sunday morning then the smell of Apples and Cinnamon?
This recipe will be sure to make your morning extra sweet! You won't even have to do any cooking because it will already have been cooking all night for you. Just stir, scoop, add toppings, and EAT! It's the perfect recipe to do when you have company because like with any Crock Pot recipe, it makes a TON (about 12 servings-1 1/2 cups each)! Feel free to cut the recipe in half to make a smaller batch too.
This recipe we will be setting to cook overnight. Just like my Overnight Oats that I do in mason jars in the fridge, these you can just set and forget in your Crock Pot for an amazing morning breakfast.
Here is what you will need:
Non Stick Cooking Spray
1 1/2 cups Steel Cut Oats
1 1/2 cups Unsweetened Almond Milk
5 cups of Water
1 cup unsweetened applesauce
1/4 cup Brown Sugar
1 1/2 Tbsps of Cinnamon
1 tsp of Nutmeg
1 tsp of Salt
1 1/2 tsps of Vanilla Extract
1 Tbsp Ground Flax Seed Meal (optional)
Walnuts (optional topping)
Sliced Apple (optional topping)
1. Spray your Crock Pot with non-stick Spray
2. Put all ingredients into the Crock Pot. Use more liquid for a thinner texture, if desired.
3. Cook Overnight for around 8 hours on LOW.
4. IMPORTANT NOTE: Don't freak out by what they look like in the morning, there will be a brown crust look at the top, you just have to stir, stir, stir. (see image below)
Enjoy with Walnuts and Sliced Apples or add other healthy toppings like berries, whatever you like! And this makes breakfast for the WHOLE WEEK! Just store in the fridge and reheat. ENJOY!
