Recipe: Pasta & Cheesy Broiled Tomatoes

I came across this recipe maybe 5 years ago in Real Simple Magazine. We make it all the time in our household and have put our own litlte tweaks on it. Mainly making it with fresh pasta and going sans basil. Basil is a great addition we just never end up having it in the house and when we do buy it, it ends up going to waste. But feel free to add some basil to this yummy recipe!
What I love about it, is its super SIMPLE. And although its not 21 day Fix healthy, its actually clean eats-especially when you use fresh pasta like how we do now!
-1/2lb fresh pasta (don't be jealous, we get ours fresh cut from Broders in Minneapolis)
-2 large on the vine tomatoes, cut into thick slices
(for 2 people, it ends up being 5-6 slices each)
-3 tablespoons olive oil, plus more for the baking sheet
-salt and black pepper
-8 ounces fresh mozzarella, sliced
-1/4 cup shredded Parmesan (1 ounce), plus more, for topping when served
(you are going to want to do this fresh, from a block of parm-don't buy the bag stuff!)
-2 cloves garlic, chopped
-1/4 to 1/2 teaspoon crushed red pepper
Do your prep: Slice Tomatoes and arrange in a single layer on a lightly oiled rimmed baking sheet (or topped with tinfoil), Shred your parm and put it to the side, and start to boil the water for your pasta.
Season Tomato slices with salt and pepper.
Slice Mozzarella into 1/4" slices (around there) and place on top of each tomato slice.
Next, sprinkle the slices with the shredded parmesan.
Set aside the tomatoes while you heat up the garlic and oil sauce.
Warm the oil with the garlic and red pepper in a small saucepan over medium heat until fragrant, 1 to 2 minutes.
Pop the tomatoes and cheese into the oven and set to Broil until the cheese is bubbly and golden, 3 to 5 minutes.
Cook your pasta. Now we use fresh pasta so its super fast. But for regular pasta you might want to start cooking alittle earlier.
Once pasta is cooked, add the garlic oil and toss to combine.
Serve topped with the tomatoes and additional shredded Parm and ENJOY!
